A cutting demo of how it cuts would have at least given me some kind of an idea of how much I would, or wouldn't, love it. I'm not trying to be a jerk, but rather than the packaging and pins, I think most people would just rather see how these pretty expensive knives actually cut.

Appreciate the feedback. I had planned to do a demo video, but never got around to it. I did title the video as unboxing, rather than testing or cutting demo for that reason.

Would you say it's a good knife for most heavy duty prep?

It is a very heavy and capable knife. Good for butchery tasks and descent as a chefs knife as well, but can be fatiguing overtime for general use since it is bulky.

Theu have heald up great. Still look and feel new. They don't hold an edge as well as some other high end blades I've had, but not bad at all, and I enjoy the sharpening process anyway. Even just regular honing helps
