"Any coffee which is like 100'C is shit." Sorta. Almost all large chain commercial coffee houses are using dark roast because it's what the everyday Joe's palate is used to, and the hotter you brew, the more you'll extract. If it's poor dark roast coffee, then you'll be pulling out a lot of flavour, for better or for worse, and for some dark roasts, or most commercial roasts, it can be a lot stronger and more bitter than is desired. If it's too hot of course, it'll burn your tongue when you drink making it worthless to drink past that point. When it comes to home brewing though it's advised to brew straight from the boil, or if not then add a time delay according to your tastes and the roast. With a light roast it'll be harder to extract so as close to 100'C is ideal. In addition, the moment the kettle is boiled, it's already cooling down, and cooling down far more rapidly then many assume. It's unlikely, even if poured immediately, that you'll be getting 99'C water because the water that hit 100'C is vapour, and the rest can only store the heat for a very limited period of time. On average off the boil I'd say the waters probably hitting the bed of coffee about 95'C, maybe a slither hotter, maybe a slither cooler. This'll likely be different according to a commercial machine wherein the water temperature can be tighter controlled, and thus may be exiting the chamber and hitting the bed pretty darn near 100'C. Aside from a couple of hotspots like Two-day Roaster though, Bristol - where Duncan is - in general has really poor quality coffee at the cafes, and I wouldn't be surprised if they're extracting poorly, or pumping out the coffee at a scolding temperature.

why am i so mad at Duncan for not understand how coffee is made. coffee is supposed to be hot. MAYBE this will be easier to understand for the kids over the pond. when you stoop tea, is it not made from boiling water? you can stoop coffee the same way. percolated coffee is also made from boiling water through grinds french pressed coffee is supposed to be right under boiling while it stoops. turkish brewed is literally the foam after boiling it. cold brew coffee is the only coffee that i can think of that isnt made/served hot, but it's got the word cold in it. "burnt shit" educateeee yourself. "grill marks on my steak means it was cooked wrong, burnt shit they should learn how to cook". for some reason this in my head is duncan.

They tend to serve them at significantly above boiling temp, which is too hot and does cause it to become burnt shit. At boiling temp is all you need, like coffee like tea. I can’t claim to be a connoisseur, but apparently just under boiling (or 90 degrees like he said (we use Celsius here, remember)) is also fine.
