In C Major, the chord of the lowered sixth is correctly notated with A flats. In the A minor sections, G sharps are used since they are the 3rd of the E7 chords - G# being the leading tone to A.

@@MooPotPie sure, in fact I rather meant the E flats at 0:20 which are functionally rather D# as they resolve into E 🤣🤣 never mind.

@@wolfgangberndt3481 The E-flats there are the dominant 7th of the F7 chord which is a common chromatic tritone substitution is jazz & pop harmony. . Technically, they resolve downward to the [implied] D natural in the E7 chord which follows. The B naturals are melodic appoggiaturas which are non-chord tones (otherwise they'd have been notated a C flats) which resolve to the 3rd of the F7 chord (A). Were these dominant chords conceived of as B7(b5) rather than F7, then yes, the Eb would be D#.
