He's the most childish owner in Kitchen Nightmares. From what I've read about him, he returned to the old menu & completely discarded Gordon's advice. The restaurant is closed now. Add: Sebastian then stopped being an actor opened another business (not culinary-related) in his hometown. One of the cooks worked at an Italian restaurant that was also included in Kitchen Nightmares. He joined the restaurant as a chef after it was renovated.

I really think people view Gordon's advice as a god's bliss. From my perspective that weird menu was something he was proud and one of the top reasons he opened the restaurant in the first place. Gordon's may be a lot more sucessful and practical, but if he wants to stick with that what do you want to do? He did see the sucess and went backwards anyways. It's either: -He wants to call himself smart to have something nobody else does. -He genuinly loves that concept. -Or both.

This episode always makes me laugh. The phrase "tosser" has a very different meaning in the UK - it has a slang sexual meaning and is like calling someone a dork or a loser in America! So the biggest "tosser" before Gordon trained the chefs to toss pizza dough, was Sebastian himself! 😅I'm sure Gordon deliberately had that British double-meaning in mind when he mentioned them becoming tossers!

his menu concept failed him on a few levels: 1. Cost Effectiveness. How much of that financial hole was made by having items for flavours next to nobody ever chose? Also, it would've been WAY more cost effective to have stayed making your own dough as flour, eggs, salt, and milk are easily purchasable in bulk for restaurants. 2. Time. If it takes a server longer than (generously) 2-3 minutes to explain it, either the server hasn't had the item themselves, or the item in question is too needlessly complicated and you may have lost a potential return customer because of it. 3. Choice Paralysis. It's a thing, it's a very good reason as to why many successful restaurants keep menus small, only adding and removing specials and seasonal items as time passes. It's also less stress on your staff in a very fast paced environment where, if you aren't careful and watching, somebody could suffer an allergic reaction, die and/or sue for damages in the worst case. All in all, Sebastian shouldn't have entered the industry if he couldn't wrap his head around these facts and a few others

My dad worked at an Italian restaurant when he was in college and they always used fresh dough for their pizzas. It’s really not that hard or expensive to use fresh dough and Sebastian’s excuse for not using their wood-fired pizza ovens is BS, once that pizza oven is lit, it can go a long, long way. Edit: this wasn’t a really high-end Italian place, either. It was more like Capri restaurant

So yes, with a little understanding, making dough for a pizza you're making at home is easy, but a restaurant is different. You have to invest in a mixer(s) and buying them along with the maintenance required is pretty expensive. That being said, this place could have invested in these things so they could have had good fresh food but instead this owner had the worst priorities and totally missed the mark.

I'm not so sure Sebastian's tears near the end we're fake. After his confrontation with Gordon, he went on a walk and smoked a cigarette, left with nothing to do but think. During that time, I think the objective truth became apparent. It was a truth he didn't want to believe, because if he did that would mean he was a failure; he didn't want to believe he had failed and could never attain his dreams. None of this is to say his behavior was justified, only understandable.

I live in the UK, my street has 4 pizza shops in our village, one did try to cut corners buying in froen dough, it nearlly finished him, he went back to fresh quickly, he is still open as are the other 3, I know this because i worked in one during and after lockdown, it was new shop opening, i was deliver manager, we had 5 drivers at its peak, i could not get on with his sone, i left, they tried to manage the drivers themselves, no clue of the area, they dropped to 2 drivers and sold up 6 months later,

A self-proclaimed chef who only became a chef in the first place because he saw it as a path to stardom (for some reason) and only called in Gordon because Gordon is the best example of a chef who did that. Imagine not having the understanding that Gordon becoming famous as a chef is such a one in a billion shot that you'd be better off going the route of your waitresses. Even for Gordon, it was a case of the stars aligning, I don't think he ever set out to be famous, it just sort of happened and he went with it. This is just sad. If any aspiring stars are reading this, don't attempt one of these novelty paths. Just audition and start a KZbin and pray that the Lord wills it to be for you. If you're a chef or aspiring chef, don't try to get famous. Just have that love and passion for food and if it happens, it happens.
