Thank you for making your bread the traditional Newfoundland way, kneading by hand. Something very comforting to me about seeing you make it as my dear Mom did. Even the way you scrape the flour off the side of the bowl using the back of your hand. I could never wait till her bread cooled either!

Hi Bonita, Your recipes are wonderful. I made your whole wheat bread and now I am making this wonderful rye bread. Your bread recipes are a God send, and my husband and I just love them. You are on my favorites list and I subscribed to your youtube channel, so now I won't miss out on any of your lovely recipes. I have to admit that I cheated a little bit in making your bread and used my Zojiruchi Bread Maker to mix and knead the dough. It takes 22 minutes to mix and knead it, but I am 80 years old and I cheat a little when it comes to energy giving. My husband has diabetes 2, and this bread is the answer to his bread craving. It looks wonderful. When I was younger I used to love to make breads. All types of bread and even english muffins and pretzels. Anything bread like. Now my son is older, has his own place and my husband just passed away in July, I don't make any of that anymore. Maybe I should start again because I just loved doing it. Homemade is always the best.

Made this but used dark rye flour instead of light since I didn't have light, and used 2 Tablespoons caraway seeds and pickle juice instead of vinegar and it turned out just like the pumpernickel bread I grew up on...but beware, it will be heavier and not rise so much in the oven...delicious!!! Thank you Bonita for not putting in molasses, as it takes away from the "rye" flavor; really appreciate this recipe!!!😋

Thank you for explaining the differences in making rye bread! I started milling our flour this last fall and its been an exciting journey. I found arecipe for Dark Russian Rye Bread in a freshly milled flour cookbook. I did cheat and use organic rye flour but used mine for the white flour called for. I didnt understand why ir said "not to overknead the dough". I also didn't understand why it wasnt rising like a typical bread would. I saw the beautiful cracking and figured thats all i was going to get. The flavor was really amazing, but its DENSE. All whole grain breads are, of course. But I am researching how to make this bread better because my kids love the flavor. This video is exactly what i was looking for. The "soaker" makes so much sense! Thank you. :)

I know this video is a older one but I couldn't help but watch it Bonita. One of my most favorite things to make is bread of all kinds. I make bread every week. I swear that my neighbors are peeking in my window the day I bake bread. Of course I always share with whoever should stop by. I'm a huge fan of caraway rye or pumpernickel bread. My husband is a plain white bread eater. Then of course I also make cinnamon swirl or cinnamon raisen bread. At Thanksgiving, I make a cornucopia from bread dough for my center piece that holds dinner rolls. There isn't a better smell in my house then baking bread or maybe a turkey roasting in the oven. I should invent a "perfume" that smells like bread baking but then I would be shooing away the men and I don't need that....lol...anyway, thank you the wonderful recipe. I do it the exact same way as you. Take care.

Haha I love your message, sorry I'm only getting to it.....yesterday we had a winter wind and rain storm and our internet wasn't working and I was trying to use my cell the manage my channel and had you give up. I agree the smell of bread baking is the most relaxing and comfortable feeling in the world.....Raymond is the white bread eater and I'm dark or cinnamon bread lover. I love your comment about your neighbours peeking in the window the day you make bread. haha so wonderful. You are very welcome Tonya, I'm glad to help. You will need to make a light rye dough and a dark dough, cut off the amount you need for one full piece of dough, half light and half dark. Roll the both of them out on the counter top dusted with flour and place one on top of the other and roll them outward and place in the bread pan and let rise. When it rises it will have the two colours and it will be swirled and look so amazing. You can do this with white bread and food colouring aswell. I came across a real deal on a 25 pound bag of rye flour. Your recipe will help me use this rye to produce soft loaves with a good rise. Most recipes go for dense loaves with really crunchy crust.

I love bread and this looks delicious. My problem is if I had a loaf of homemade bread and butter I couldn't stop at one slice. One of the best sandwiches I ever had was homemade white bread with mayonnaise and slices of tomato fresh from the garden.

You decide because both would work great. The cocoa powder will make it more dark. Its all in the preference of the people making the bread. Some like the texture of the light rye flour and more like the flavour and texture of the medium and dark rye flour. This recipe for light rye I feel is very tasty and a beautiful bread.
