I think I know why Vader chose Mustafar. Palpatine offered Vader a world that he could shape as he wished, but Vader chose the world that ultimately reshaped HIM. It was the world where he ended the Clone Wars once and for all, the world where he lost the love of his life and his best friend, and the world where he was forced to become something he hated above all else: A cyborg. Mustafar was the world where Anakin Skywalker finally died (at least, that's what Vader wished to believe), and where Darth Vader was fully born.
