Is there a way to do this with a txt file instead of an excel file?

Yes, you can do this with txt files. If you're using COZYROC SSIS+ 2.0 or later, you can simply use the "Remove static columns" feature on the Flat File Source component to remove the static column names and replace them with a single THUNK_COLUMN.
