Kenji - this is such an awesome video and it's great to see you two interacting. What do you think about using the ISI whipper to make an infused oil? Isn't it so much easier? I know Dave would say that the yield is not as great as the centrifuge. But using NO2 in a whipper is much less real estate than the Spinzall.

For all the ppl asking why you should use it: you can clarify fruit juices. The more clarified a liquid is the more carbonation it can absorb and it looks cooler

Dois Koh It's probably a PID loop controller with limit switches or vibration sensors. Kinda like how your washer's spin cycle knows how not to destroy itself when it has an unbalanced load.

This was just a single camera w/ a shotgun mounted on top. No individual mics so sound quality is a little funky.

I think they just noticed the audio when you we're shooting with the phone at 2:20. Doubled audio tracks from both cameras.

J. Kenji López-Alt over Christmas I tried the one year egg nog at the bar I worked at back in 2015. I didn't even realise they had kept some. It was super funky but definitely not sour. I was very impressed.

+Gavel Pound Google home/kitchen centrifuge, there are already products out there that I would imagine are going to be cheaper than his. He was pretty clear about not wanting to have an affordable price, he reiterated himself many times.

Drbutts Those cheaper bench lab centrifuges use tiny (like 15mL) test tubes, take much longer, and have to be balanced every time.
