Chef I am a fan of yours and i notice that mention is always referred to the Africans, Amerindians and Chrinese contribution to food in Guyana. Although the Portuguese are in the minority in Guyana Ihink they need to be recognized for their contribution of garlic pork as well, which is a very popular meal at Christms in Guyana.
