Hello Chef: how nice of you to get into a business like this for the young people. My Aunt was the head of the Carnegie School in Guyana in the 50’s-60’s . Mrs. Margaret Hercules at that time they used to have classes for girls from elementary school once a week to teach the girls how to cook. It was very pleasurable, my sister and some of her friends were picked to attend. I live near one of the largest cooking Colleges now and every Saturday when the young chefs cooked you can book an appointment for lunch or dinner to the public, but you must book in advance. The classes are for college boys and girls. They go the College to become professional chefs during the week and on the week-ends you can reserved a table to have your lunch or dinner. It’s a great experience for anyone who would like to open their own business. The foods are great and there are lots to choose from . You have your appetizers, main course and desserts. It is quite something to see and eat and the scent is sensational. When I was a child I remembered my father taking my sister, my brother and I to dinner at the YMCA in Guyana. There were so many different dishes and we were small under twelve. Imagined sitting in front of so much food. The next day it was in the newspapers. I still have a copy of that picture. Anyway I am so glad and happy what the children of Guyana are doing today. It is great. Keep up the good work. They could not have a better mentor. All the best. I left Guyana when I was fourteen and visited the following year. Then I went back to get married at the Pegasus in 1975. I went back again in 2000 for my twenty fifth anniversary and haven’t been back since. I might tried visiting after Christmas. Don’t know yet. I am getting too old for long travelling.

Delvin Adams you are doing a Great job, I was in Guyana last year OCTOBER and again in Feburary of this year. I was trying to meet up with you both times, but you were out of the country. I myself have not been back to Guyana for many many years, and I was looking forward of having a great experience and adventure with all that you have to offered.
