To make the potato less greasy just fry at a higher temp. They are already cooked. You are basically just making them crispy.

Not to unlock a new fear but I went tubing last year after it melted a little and froze back up and I went up the other side, through the fence, and tumbled ass over teakettle down the side tubers shouldn’t be. It hurt to raise my left arm for 2 months. Oof.

The first time I went skiing, I got a little ahead of myself and skill level, and was heading straight down one of the higher hills straight to the bottom at breakneck speed, so I skied into the waist-high barricade rope at the bottom, thinking I'd ski into it, and it would stop me. I skied into the rope, flipped around it like a gyroscope, feet it the air and smacked my head on the ice, face down. After being medically cleared, had to spend the rest of the night drinking cocoa in the lodge.🙄

There is a Korean dish called watermelon cold noodles (수박 냉면) that uses Sprite in the sauce. It is so delicious and sweet and spicy. Sprite seems like a good ingredient used in moderation.

Just for fun discussion point, the reason you don’t see fried salmon all that often in this manner is because it already has a lot of natural fat to render out, and if you’re not careful it can become a bit greasy

Fun tip: I use a potato ricer that has holes all the way around (not just on the bottom) and never peel my potatoes or use a slit. The skin ends up on the inside and I just clean it out with the back of a knife every few potatoes.

Adding a bit of water (or milk, or cream...) to that potato mixture would probably have helped it form better and would have helped it fry up less greasy since steam escaping from fried food is what keeps oil from infiltrating the food. If the potato nuggets were too dry, there wouldn't be enough steam to keep the oil out.

Omg I was in 7th grade when the changes to the cafeteria system came through. We used to have slushie machines, in-house cooked pizzas, and so much more good in school cooked foods. Sadly, after the change most of our stuff went to super processed foods that followed health guidelines. Even now without the guidelines set in place, my younger cousin's currently attending the same school say that the quality hasn't comeback since. Kinda sad but thanks for the blast from the past😂

I think the issue with the bubble potatoes in this vid was that there probably was not enough potato. From the vids I've seen people making it, their doughs looked a lot more pliable and hydrated than David's dough here. That's why I'm an advocate for using dehydrated potato flakes for whenever a recipe calls for mushed potatoes. Very easy to control moisture level that way. If peeps aren't familiar with working with rice and just non-wheat starches in general, they take a little bit more time to allow moisture to absorb so it's also possible that David could have let the dough rest for a bit before forming and it would have achieved the right texture.

Glad you are able to recover from the knee injury. You hear about them happening to sports players all the time and them having relatively quick recovery and getting back to 100%, but then when you hear of it happening to ordinary people, you realize that it's not as easy when you're not literally in peak physical shape and have the best doctors in the world.

Hey David, if you're super lactose intolerant like me, I'd suggest a product called Lacteeze. They're these little lactase enzyme pills that help your body process lactose. I can get them here in Australia and I don't know how you'd go in the US, but the bottle says they're manufactured in Canada, so you never know.

I use cheetos in my heart attack chicken/pork rolls recipe I came up with and I found the best way to retain flavor is to put the crushed chips between paper towels on top of a plate, then put another plate with some weight on top of that. Getting all that grease out before using them helps a ton. I also never fry as it loses the flavor, I bake or air fry. I should really try to get my recipe up somewhere I'm sure folks would think its one of the strange sorts like these but its really good. Fritos, cheetos, and funjuns together make a very tasty breading and you can even change the type of fritos to change the flavor! Chilli cheese is great! Fritos and funjuns also hold flavor well.

Not sure why, but the low sodium soy sauce tastes better to me than the regular one. I had it at a local restaurant one day because it was at the table and the regular one wasn't available. I was surprised that I preferred the taste of it compared to the regular one.

We lost all of our from scratch deserts when school food rules were changed. We had an amazing cook that came in extra early every morning to make lunch desert, it helped my scholarship was very small
