It's funny cause it's backwards: Oatmeal is great, but raisins are terrible by default, so the fact that the delicious oatmeal is unchanged, but the horrible raisins are replaced with spiders means that there has been no change in quality.

I have a massive love-hate-terror relationship with hags. As a DM, I love them. As a player, they terrify me, and I hate them with every molecule of my being. My players only feel the latter thirds of that dynamic. Granny Dreamrot has adopted our tiefling sorcerer as her own after a certain... incident, and they've been completely paranoid about what her goal is.

I love hags. As a DM, I had one in a trio of old grannies based on the old Wendy’s “Where’s the beef?!” commercials of the 80’s. One got infected, ate the sweet old grandmother who was basically Rose from The Golden Girls, and that infected one got killed by the party. Now the remaining granny, the hag who had liked the party, wants revenge but the party doesn’t know it yet. I can’t wait for her to turn back up down the road.

Hags make such great side quests. They can be powerful enough to be relevant at any level, and their deal making can be a great plot mechanism to advance the main story.

A one shot I’ve yet to finish has the final boss be a hag called Granny AM who’s been in a forest/mountain area for centuries. She was able to get every kid to commit mass murder on their parents in the small but growing town. Now she’s seen as a village elder who’s always been here. Magic items are a smoking pipe of geas that bleeds into your entire family tree if you fail the save, a tooth that grows one wight when implanted into the ground, a jar of honey that casts slow, and she’s so old she’s warped the forest into creating illusions of her that does damage unless you look into a tree Blair witch style.

I like reading hags as people who have descended too deep into fey magic in the same way that lichs descended into necromancy. They sought immortality, dug too deep, and were irrevocably changed.

A recent plotline of "The Wandering Inn" web serial deals with witches much the same way: don't get greedy, know there will be some catch, and don't try to cheat the women who have been wheeling and dealing since before your grandparents were born- especially if they can call in favors from past customers

Operative difference is that hags seem to be written to have clearer goals than neutral fey. All you have to do with a hag is find out how she intends to benefit.

Closest thing would probably be Warlock with an Archfey as your patron. In fact the rule book even says your patron could be a super powerful ancient hag. Be sure to take hex as one of your level one spells.

One time my players literally called the inquisition on a Hag because she cursed one of the party members, and they got their asses kicked when they tried to kill her to end the curse so when the inquisition got an tip from a mysterious person saying there was an extremely powerful Hag in the woods they checked it out then dropped an army of paladins on the Hag a week later the curse deactivated due to the casters death

In my games, hags are the oldest fey of all, the originators of all fey races. Additionally, they're all powerful Divination Wizards, and each of them has seen visions of the end times. It is due to these visions that they spend all their time hoarding power, in preparation for the end of the world. They are, in the end, the world's most powerful guardians. But their vision of deep time, and the weight of their task, makes them cruel to living individuals. They just don't care that much about people, because their self-appointed task vastly outweighs anyone's feelings. They are the last line of defense for existence itself, and it is the hags that will save the world at the very end. So they don't give a shit about you or your life.

Well, a green hag is CR 2 and my party of 2 LVL 2 characters can take out a CR 2 monster somewhat easily, but annis hags and night hags should not be engaged that early, I'd wait till lvl 4 to 6 to fight the tougher hags.
