It's safe to eat no doubt, but not my preference. For thicker fatty cut like ribeye it is better to let it render for a while in sou vides or oven at 225F

Should’ve reverse seared it or finished it in the oven for a steak that thick

You need way more heat transfer and baste it for longer and let it rest for longer. That is terrible
