Shrimp scampi recipe!! Recommend reading the whole thing before you start :)
Ingredients:
Spaghetti noodles (I used banza chickpea pasta)
Olive oil
Garlic
Red pepper flakes
White cooking wine
Parsley
Lemon
Salt
Pepper
Garlic powder
Butter
Shrimp (thawed out, peeled, deveined)
Grape tomatoes
Green beans
For the amounts, you can make as much/little pasta as you want and cook as many/little shrimps as you want depending on how much you want to eat, if you want leftovers, if you are making for multiple people. The choice is up to you my friends!!
Instructions:
-Bring a pot of water to boil and cook pasta for directed time. Drain with strainer when done.
-Take prepped shrimp (make sure they are thawed out if previously frozen, peeled, deveined) and season with garlic powder, red pepper flakes, salt, pepper.
-While pasta is cooking, take a large skillet and sauté oil that covers the pan and some butter over medium heat until hot. I could have added more oil than I did so I would say 1/4 cup but again preference thing. Just make sure oil covers pan.
-Lower the heat. Pls be careful to not splatter hot oil on yourself OK safety first here. Add seasoned shrimps and squeeze half a lemon into the pan. Cook shrimp on both sides until pink and remove from the pan.
-Back to medium heat and add to the skillet:
white cooking wine (I did 1/2 cup but you could do 1 cup if you want the sauceeeee)
minced garlic (I minced 4 cloves)
sliced grape tomatoes (if you don’t like tomatoes just forget’em ALL GOOD)
dash of red pepper flakes
Cook for 2-3 minutes
-Back to low heat and add to the skillet:
cooked shrimps
minced parsley
mix in drained pasta
Optional:
Sauté green beans (GIMME GREENS) on the side in olive oil and cut them and add to the skillet.
Stir it all up and DIG IN!!! You can season to taste with anything like more salt, pepper, cheese, etc.
