Some people might complain that Daima seems to be making a lot of needless changes, but with every episode thus far there has been atleast one or multiple lore drop or additions, to the series. Like at this point it's less about Toriyama seemingly changing or forgetting things on a whim, but more about him setting the record straight and answering a lot of long thought of questions and the take of the direction of the series in terms of future world building as a whole. In a way it's sad considering his passing, but it seems like he really thought about the lore of this series, which I don't think DB itself has ever had such an emphasis on lore untill this point.

Probably are. We know that the size of the dragon balls doesn't actually have any effect on the wish granting power so it's likely that Zalama just wanted to make them that big to emphasize the orbs power and status. The size of the orbs, wishes they can grant, amount of wishes, if the scatter or not, where they scatter, and if they turn to stone or not are entirely up to the Namekian who creates them and it probably also depends on the individuals skill.

He was already stronger than their previous Surpreme Demon King. Another reason is probably Akira wanting a younger Goku using his newer art style.
