So what was special about yoriichi’s body? He doesn’t look big or muscular. Yet his body is stronger than gyomei’s, right? That’s why he can sun breathe and gyomei can’t.

Yoriichi was born special, so he had everything special about him. It's true! Yoriichi might not have the muscle mass, but he is superior in skill and talent to Gyomei. If you consider strength then Gyomei has the upper hand. There was more than one criterion for using sun breathing, only strength is insufficient. Yoriichi and Tanjiro met those criteria, so they can use sun breathing. Although Gyomei has a perfect body the only body is not enough to master sun breathing, he met all stone breathing criteria.

Yeah, Stone Breathing doesn't have any visual effects, same in the manga as well.

I think because gyomei is blind, these visual effects are only visible to the breath user, but gyomei is blind so he can't see them
