Esoteric Agriculture Episode Fifty One, Death by Sauerkraut, Four Year Old Sauerkraut Reveal.
In this episode I open two Sauerkraut buckets that had been sealed but not canned or frozen, and had been left in my garage for four years. The Sauerkraut was naturally lactofermented by me in the Autumn of 2015. The Cabbage variety was Late Flat Dutch. This isn’t a how to video, it’s meant as more of an entertaining and slightly demented science experiment.
If you are interested in Fermentation may I suggest you read ‘ The Art of Fermentation ‘ by Sandor Katz. I don’t know of a finer reference on Fermentation. I own this book and have tried many other things besides Sauerkraut.

The longest I've let sauerkraut go at room temp is a month. And it was pretty mushy. I was psychically urging you to try the first one. Alas. I've had a Chinese "pickled vegetable" that was definitely some kind of partially dried sauerkraut at 5 years or more old (it got forgotten in my pantry for ages before I ate it). It was fine, and more importantly so was I.
