Interesting idea though I'm cringing seeing you knuckles so close to the blade. Where are you getting those small Shapton stones?

This technique definitely requires care and concentration to avoid injuries. I do keep my fingers as far away from the cutting edge as l can at all times, and also make sure the blade stays very stable and secure. But you're right. It is riskier than standard stone sharpening. I cut the small stone chunks myself using a thin hacksaw to score them and then an old chisel and hammer to cleave them. You can get 10 to 12 good chunks out of one Shapton Kuromaku stone. I like the Shaptons for this because they are on the thin side and much easier to cleave than thicker stones like Choseras.
