Not boring at all, babes! Like with any skill, takes practice to get good, so I'm glad you tried something out of your comfort zone. THE FLOUR BEING EXPIRED THO IS NOT GREAT LMAO! You didn't ask for tips, lol and I know you don't like baking or cooking so you probably won't really use them, BUT if you wanted to make pancakes again: yes use good flour, yes remember to add the salt, yes the batter was too thin and needed more flour, BUT ALSO. It looks like you seriously undercooked the pancakes and needed to cook them longer--not just for color on the surface and to get a nice crispy outside with a fluffy inside, but to cook the batter all the way through! I think even those few things with the recipe you had would've made for a much tastier pancake. With that said, that was probably an American recipe that used cup measurements, and those are a particular volumetric size that require specific instruments, and likely why the batter ended up so thin in the first place. So if you want to try it again and you have a scale, I would look for one that's in metric units (grams and milliliters) so you can weigh it out! I'm American and moved to Italy and I've had to convert a bunch of my recipes to metric cause finding cups, teaspoons, and tablespoons is neigh impossible. So if you have a scale, I'd really recommend looking up metric recipes! Should help a lot with any recipe you want to try out, cooking or baking.
