I'm new to this, and occasionally I get vertical spikes when I lift my iron. Is this problem a technique issue, or is it the tools and/or materials? I hope that made sense.

Sounds as if your iron is to cool. Use a temperature controller and adjust your heat correctly.

Make sure your tip is squeaky clean. That helps the solder release in my experience.
