Thank you! I tried to translate most of the time. I didnt translate some of it because I dont even understand what they were talking about...its either local dialect or with strong local accent

In China, expect to learn to sit up straigt on a small chair, grab the bowl with one hand and the other the chopsticks. Those crawfish are popular in China, but one has to be cautious about eating too many of it as a whole because the shell may be hard to digest.

sometimes a badly processed kidney can have funky smell/taste, fresh clean ones are relatively light in taste, mostly the seasonings and the texture

I’ve never really gotten into organ meats, but I know that it’s a very normal occurrence in Chinese food and I really want to begin to eat them. Do you have a specific cut of organ meat that you think would be the best for beginners?

I'd say beef tongue is probably the best place to start. Chicken gizzards, heart, and beef tripe are also good, too. Pig parts, especially intestines are most common in China but it takes skills to cook it right! anyways, go give it a try!
