this is SO good with a side of jasmine rice. sometimes I put a small bed of romaine lettuce underneath, just to catch every last drop of the dressing. I'm sure I'm being extra by adding crispy fried shallots to when I eat it, but even without them, this is so special. it seems so simple, and it is... but it's definitely more than the sum of its parts. absolutely perfect for a satisfying meal on a hot summer night.

Pai, this is one of my favourite recipes from your book. I’ve made it multiple times and I found that it also works well with deep fried soft tofu in place of the egg! I also add some thinly sliced lotus root (blanched) to the salad for extra crunch. Thank you for doing the video demo!

In Portugal we fry the eggs like that, just with loads of olive oil, if we want to flip it we call it "Spanish style", so I assume they also do them crispy and bubbly :) I'm so going to be eating this for a week straight!

Spanish eggs are traditionally fried in lots of very hot olive oil, "vestidos de torero" (con encaje-with lace).

@@tsuribachi the Portuguese took a lot from where they travelled as well. It’s not only a one way exchange. 😂 It’s like christoph Columbus discovered America! As stupid as it sounds they Europeans wrote their history through their lenses. And it gives some absurdities like that. 😂 Many books were written by Europeans and they wrote what they wanted. That’s it.

My mom taught me to dress some freshly made rice with fish sauce and lime juice, then fry some eggs in oil and toss them on top of the rice. Super simple meal that I've served to DOZENs of friends who "don't like Asian food" and they always gobble it down. People actually call me up and say, "if I brings you some eggs, will you make that eggs and rice thing again?" I actually get more requests for that than I get for any other Thai food Mom taught me to make.

First time frying egg: meekly crack an egg into the pan, a lot of "eeek!!" and "aaah!" with oil bubbling, manage to break and mix yolk and white togather. 10 times later: oil bubbling = "yeah, whatever"

My family always make this salad but we also mix fried egg with salted egg for different texture and added saltiness. Its my fav dish to eat with boiled rice and steamed rice :D

I'm in love! I always prefer crispy fried egg and omelette. No mushy eggs in my house. Had this salad tonight. Added more coriander because I love love love it. Didn't have tomato, no problem. I added more bird eye chillies because I love it😂

Funny that the salad dressing is kinda like a Prik Nam Pla without garlic. When I do a prik nam pla I'm always using the remainder for salad. I'm then adding a very mildly Umami rice oil or a coconut flavored oil. I tried Lao Gan Ma oil as well but it's risky because it's too much savory, umami. Can be done though. Learned a lot from this channel..Cooking is fun.

I was once working with Thai peppers for a meal for friends and then put in contact lenses! Everyone kept commenting about how red my eyes were. I also learned that I have to be careful when touching my wife intimately after using Thai peppers! (I now use gloves!)

Though I'm from the UK i was born and brought up in Hong Kong. I just cant eat "western" style fried eggs. They have to be crispy. This looks perfect! I'm going to do this with my Grandkids this weekend. Subscribing was an easy decision 🙂

My dad was a sailor. Back in the late fifties, the whole crew was housed at a hotel somewhere in Asia, waiting for the ship to arrive. To swap the crews. Dinner time. And this one german jack was not familiar with asian food. And was mistaking green chillies for beans. What a surprise he had! My dad countiuously told us that story.
