I did it, I even measured everything but the leaves absorbs all the water. I did more and put in more water but now it looks diluted. I really dont know how you do it .. i guess i have to do it a different way .

Just finished making this for the first time because my thai girlfriend has been missing tom yum. We tried it at two nearby restaurants and she said its not like real tom yum. Her WOW after trying this recipe made me smile and I agree, this was delicious and I really love how amazing the broth is using the shells and heads. Thank you for the amazing recipe!

No to coated pot...I bought a no name brand (Sunpentown) with stainless steel pot for $60! Works great...no leaching teflon coating on my rice...btw, you need to throw away your red pot. It already has scratches.

Such an easy recipe. I will try it out. This method, not the ingredients, is pretty much the same for this snack called mutthiya from the western part of India. There are many variations which use different vegetables/flour combos. Check it out if you're interested.

They added Fermented Fish Sauce (PA THONG Brand/ตำมั่วและภาทอง) to my papaya salad in Phuket, I am OK with that (but no fermented crab PLEASE!!). And damn, I have those top left one, will buy a better one next time!

I just made this last night! Heating the oil to the right temp is key. First batch oil was too hot so it browned really fast. Second batch was perfect. THIS will be my go to recipe! Thank you!

Love this as a food and language nerd. One thing I will say though, is that you can *definitely* represent every sound in Thai using only the letters in the English alphabet. English itself has more sounds than it has letters, and it's still doing fine. Not to mention all the other languages that use the same letters for different sounds. Also, I think there's some strong Anglocentrism here; it's *romanisation*, not *anglicisation*. "th" for example isn't a problem for speakers of almost any language in the world other than English. I think g/k/kh and b/p/ph make perfect sense. The reason "phone" is spelled with "ph" and not "f" is because the original Greek word was pronounced with an aspirated p sound. A compromise might e g/k/kk and b/p/pp. Really it all comes down to what the main priority is. Is it to make Americans guess the pronunciation more accurately at a glance, or is it to be able to accurately represent the Thai language using the Latin alphabet? Usually it's a combination of the two, and sometimes different systems are used for different purposes. Thai is particularly messy, but other languages like Arabic, Korean, and Russian also have contending and sometimes freely varying systems. Often many different systems are used depending on the target audience. The name "Dostoevsky" is written "Dostojevskij" in Sweden for example.

I totally love your videos na. Im a farang resident in Bangkok for over a decade and a traveler here previously. Here's my take. Re: hard butter - every hotel I've stayed at in Thailand has always had rock hard frozen butter. I normally just sit it on my toast for a few minutes to soften it. Pad Thai - I've never actually eaten it. Probably because I'm allergic to peanuts and I just get tired of explaining that I'm "pare tua lisong" to all food vendors, so better to just not bother. But go down Khao San road and every person there has noise cancelling headphones on and a polystyrene container of Pad Thai. And a large bottle of Chang from the 7. Bitter gourd - I actually like it cooked with the pork stuffing. But I wouldn't go out of my way to cook it myself and purchase it at a restaurant. I've just had it served up to me a few times and it's always been ok na.
