Thank you for the lesson on reconditioning cast iron. I was able to save my grandmother's 12 inch, Warner, Dutch Oven that my sister was using as an herb garden. I found the lid in Dad's old garage. I cooked some biscuits in it. They were great.

Mr. Rollins. I was a US Marine and served in the first gulf war in '91. Every video when you tip your hat and show your respect for the armed forces and your love for this country reminds me of what helped me spend six months in a place half a world away from my family. It was for people like you and yours... Please keep spreading your word and for goodness sake, keep cooking... 'nuff said.

Just a heads up, bruise your garlic before embedding it in the meat. The vast majority of the garlic's flavor comes from a chemical reaction started when garlic is crushed; that's why we mince it. This reaction is stopped at high temperatures, so the longer you let the bruised/crushed garlic cloves sit at room temperature before you cook it the stronger the flavor.

Where did u get ur "old guy", u better pray u get half as old & half as wise as the " old guy", & for ur wise cracking ass mouth, that just happen to Mr. Kent Rollins, u tube extradinaire, the most prestigious western cowboy cook, you'll ever see. If I was u, I would try to watch every video he's ever made because he knows how to cook & make the very best meals out of the least ingredients. He dont encourage people to run to the restaurants, five star or no star, which a great deal of them fall under. (no star), but go back to the ways of cooking our grand & great grand parents used to cook, which was healthier & more economic than this trash they're throwing @ u now, before u knock it, try it, u might be pleasantly surprised.

Wondering: Why is the meat so cold to begin with? 45° internal after cooking a bit? What was internal temp before cooking? My personal experience is that allowing meat to come to room temperature before cooking gives best results. Plus, the oil temp wouldn't drop so much when putting in the meat. I know there are at least two schools of thought regarding this. Thanks for the video anyway!
@markthegunplumber83765 жыл бұрын
well it is Oklahoma and it's outside so 45 is probably room temp and it's a large piece of meat sounds correct to me. remember the internal temp only came up 42 degrees from that to 87 or so before they pulled it and let it rest to come up to a temp of 120 something.
@GordyThomas5 жыл бұрын
@@markthegunplumber8376 All true, although when we cookout in Tennessee during cold weather, I keep the meat inside the house (usually 70°) until the moment I'm ready to take it to the heat outside. So the prep work of trimming & salt/pepper/garlic can also be done inside with the meat fresh from the refrigerator, gradually coming to room temp as it's being prepped. I personally think this is especially important with beef, as it is the most sensitive to toughening due to heat of all the classic cookout/BBQ meats. I can't help but wonder if a lower initial grease temperature and shortened cooking time might give superior results...?
