Those muffins would be wonderful with cranberry relish for the holidays. My mother always saved her bacon grease and would use that as the oil in her corn bread. It added just a little flavor and yes we would eat it as a snack. I love to hear the batter sizzle when it hits the hot cast iron.

Haven’t heard anyone say ‘pone of cornbread’ since my aunt passed a few years back. She wasn’t as big as a minute, but when I’d visit her she and I could put away a pone in a heart beat!!

My mother- in -law was Serbian and I learned to make corn bread with Feta cheese, cottage cheese, and added bacon bits as well. Beacon Grease a must.. I gave it a try and really enjoyed it.. I

I've just discovered corn flour. I buy it from Azure Standard. I have made corn bread using the corn flour and I've used corn flour for coating okra for frying. It's a wonderful addition to my cooking. Thank you for the recipe. It's always good to see you!

I've made my 4th purchase from The Mckaskle family farm, Mr. Danny & Mrs Wanda had shown us , geez a year or 2 ago about their amazing popcorn , its the best I've had in my almost 58 yrs eating popcorn , Every single kernel pop's I was amazed , now my Granddaughters are hooked thank Goodness, They only eat home popped popcorn , I bought them some & now they buy their own also But I've even purchased their White Corn Grits , They also are fabulous, once again ,I have had alot of grits in my life , but these are so creamy ,Our home can't be without them , plus I just got the Popcorn cornmeal , and made it the way the package said as it was before Wanda put up this content .. Oh my goodness, I'm buying more , you can start off with just a 2 pound bag well 20 oz for only $4.19 all their items are very reasonable compared to any grocery store or even Walmart . Or you can buy 6- 20oz bags or the big bag which now I'm gonna order as I see with my own eyes , Here in Montgomery County, Texas flour is at a shortage and the unbleached good flour I use to buy is jumped to almost $7 for a 5 pound bag , I can see using popcorn flour next , as Flour is getting crazy expensive, Give The Mckaskle family farm a try , It's amazing and grown in the USA ,plus Organic , I can't touch organic popcorn or grits , or cornmeal for $4.19 God bless you Mrs josette Tharp Montgomery County, Texas 🙏 😊😊

We just receive our wonder mill. I ran 2 cup of rice through the mill to make sure the mill was clean on the in side. It make fine pastry flour, bread flour and coarse mill. It work very well for us. Not the best but better than nothing. I will be trying the corn bread recipe. Thank you both for showing more way to get through the hard we are in and those that will come. We will be useing our field corn for the corn mill. God bless you both. Benji

I grind my own corn flour in my mock mill and when I want corn meal just adjust the grind to bigger same with making grits just adjust the grind. All grades make great tasting and good for you end products. And it’s stone ground too! Love my Mockmill!

Jiffy muffins with applesauce, evap milk, veg oil, flour, sugar, baking powder is awesome. Applesauce in lieu of eggs as dairy products are suspect here in Champaign Illinois

Refrigerate starches for 24 hours, it will change the starches to make them hard to digest. In doing so, it will go to the intestines to become a prebiotic for beneficial bacteria, a bonus for your body. I thought I would mention this since Danny is dealing with diabetes. I am doing the same for weight loss.

I love my cast iron cookware but since I've gotten older it's really hard to handle. My wrist are messed up with old author, he's one of those bad ritis brothers. I have a convection oven and regular oven combined and I use the convection oven for some things but I use the regular oven more.

I have an outdoor kitchen. But our heat index has been over 100 for months. Too hot to go outside and cook. I limit my cookng to a couple days a week in the summer. And heat things up the rest of the week

Sunday evening & trying to make the corn flour pear muffins, 🤞. Question, do you make “hoe cake” & if so, is there a recipe or suggestion? I think it is just corn meal, maybe an egg, oil, & use a flat cast iron round. Wife thinks it should be a self rising corn meal? I should have paid more attention to my gramma & aunt to learn how to make, instead of just eating it with the grist, bacon & eggs before running out to harvest the tobacco crop.
