Defining Nutrient Density in Beef -- A roundtable discussion

A roundtable discussion to announce the launch of the Bionutrient Institute's exciting beef study.
To fulfill our mission of increasing nutrient density in food, we first must define it. Thus far, we have identified profound variations in the nutrient levels in food, but we have not had the data to define Nutrient Density. This study will enable us to comprehensively define nutrient density in beef - the first food or crop for which we will develop this understanding.
This study, in particular, will assess hundreds of species, elements and compounds in beef, their microbiome, forage/fodder, and soil. We are also designing the study to identify the connection between Nutrient Density and management. We know that the levels of nutritional compounds in beef correlate directly with the quality of forage. For example, animals grazed on a polyculture pasture have higher levels of phytonutrients than animals grazed on a monoculture forage, which are still higher than cows fed grain.
In this study, led by the Bionutrient Institute, designed in collaboration with Dr. Stephan van Vliet, we are documenting the direct connections between these critical factors that leads us collectively to a greater understanding of human and animal health and nutrition.
We are currently accepting applications from growers, organizational partners and citizen scientists to be part of this ground-breaking work. Join us for this session to learn about how you can be a part of or support this ground-breaking study!

Toxins build up as the animals age. If everything in the environment is 'clean', is the meat more nutrient rich in the older animal, or is it simply tougher to chew? Is it only the variety of plants that the animals eat, or does the microbial soil richness because a variety of animals have passed over the land, influence the nutrient profile of the meat? Does solar access, vitamin D, verses indoor contained animals eating the same plants because the variety has been brought in for the indoor animals influence meat nutritional density?

Sorry, but the start of this talk was so slow and seemed to lean plant based and is fine for the vegans but, the only plant eaters I want to discuss are the ones I raise and have layed on my Bar-B-Q!

What Dan said around 1:13: ... is so important. Much more important that the marketing of different regions is defining the difference between multi-species grasses, mono-crops and feedlots. These solutions need to benefit everyone not just boutique buyers.
