10:55 - yes those shops are really old, and really famous. It's a narrow corner with small shops in old Delhi, but you will see pics of various famous people and politicians (including prime ministers I think) having had food there. The street is named after them called 'parathe Wali gali' (or, the paratha street)

Their are two types of "breads" that coke with the chole (chickpeas), their is a bhatura, which is made from maida (all purpose flour) or puri which is made from atta (whole wheat), bhatura is more fluffy and chalupa like whereas puri is crispier and hollow inside

It's heavy for dinner means because after dinner you don't have much work and time to digest, but if you have it in the morning you'll have whole day and some work so it doesn't feel heavy, that's what he is trying to say.

Check about food in Indore, it is the unofficial street food capital, not many will agree, but I have lived there for 7-8 years and I can confirm that Edit: Also noone eat banana paratha, that is just gross, Mostly aalu(potato) paratha, Methi Paratha, Paneer Paratha, Sev Paratha(only in Indore) and Pyaz Paratha are famous across country (North and Central)
