Delicious Aubergine & Tofu Pies (Vegan)

Summer is over, and the season of returning to school and work has begun, which means that ideas for snacks are more relevant than ever. That is why we created this recipe for aubergine (or eggplant) pies, luckily it’s a season for aubergines too now. Crispy, tasty, and nourishing: these pies are perfect to take with you.

We need:
Aubergine - 250 g
Tofu - 150 g
Onions - 0.5-1 pcs.
Garlic - 2-3 cloves
Soy sauce - to taste, we added 1 tbsp.
Tahini - 2 tbsp.
Turmeric
Cumin
Smoked paprika
Coriander
Flour - 300 g
Water - 170 g
Oil - 70 g
Baking powder - 0.5 tsp.
A pinch of salt
Sesame (optional)
Bake for about 30 minutes (until golden brown) at 200 degrees Celsius.
