INGREDIENTS I USED:
***Baked in oven preheated to 340 degrees for 30 mins. (Baking time will depend on your oven)
3 C All Purpose Flour
2 C Sugar
1 1/2 Tsp Cinnamon
1 Tsp Nutmeg
1 Tsp Baking Soda
1 Tsp Salt
3 Large Eggs [Room Temperature]
1 1/4 C Vegetable Oil
1 Tblsp Vanilla
LorAnn Pecan Oil
8 oz. Crushed Pineapple with Juice
1 - 1/2 C Cooked Carrots (or raw carrots, whichever YOU prefer)
1 C Chopped Roasted Pecans [Use in cake & Icing]
**Cream Cheese Icing
1 8 oz Block Cream Cheese
1 Stick Butter
3-4 C Powdered Sugar
Vanilla Extract
Pecans
3-4 Tablespoons Southern Butter Pecan Coffee Creamer (if Needed)

My wife just commented who use cooked carrots in a carrot cake. Lol..I told her about my Guru, you! She has never made one or really ever baked cakes during our 59 years of marriage. They loved the hummingbird cake. Everyone said it was so moist and tasty. You added nutmeg to this recipe. I love nutmeg also. I like what you did with the pecans on the carrot cake. If anyone ask what it is, I'll say pecan dust. Very good idea when you don't want to put larger nuts on top. Watching you, it doesn't take long to put this cake together. Especially not using the mixer. This looks like another winner. Definitely will try it. A couple of days after I made my comments, I did make this cake. As expected it was a winner.
