Claire Saffitz makes carrot and pecan cake from her cookbook, Dessert Person. Claire’s interpretation of a classic carrot cake makes a celebration out of any occasion. This version has lots of well toasted pecans and a brown butter cream cheese frosting that is not to be missed under any circumstances. Watch Claire as she demonstrates how to achieve even, light layers and then assemble them into a cake that’s equal parts, impressive, satisfying, and delicious. Remember, as Julia Child said: “A party without cake is just a meeting!”

Special Equipment:
Stand mixer
Three 8-inch cake pans
Ingredients:
1 1/2 cups pecan or walnut pieces and/or halves (5.3 oz/ 150g)
Neutral oil for the pans
1 pound (454g) carrots (about 5 large), coarsely grated (about 3 cups)
1 cup buttermilk, (8.5 oz / 240g), at room temperature
1 tablespoon finely grated fresh ginger
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour (11.4 oz /325g)
2 1/2 teaspoons ground cinnamon
2 teaspoons baking powder (0.28 oz/ 8g)
2 teaspoons Diamond Crystal kosher salt (0.21 oz / 6g)
1 teaspoon baking soda (0.21 oz / 6 g)
1 teaspoon ground ginger
1/4 teaspoon ground cloves
4 large eggs (7 oz / 200g), at room temperature
3/4 cup granulated sugar (5.3 oz / 150g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
1 cup neutral oil, such as vegetable or grapeseed (8 oz / 226g)

I kinda miss Gourmet Makes, tho. I'd love to see her do it again. Maybe on her own channel, she can take her time and be less stressed, while still making more-delicious homemade snack foods.

Same. One of the reasons I started to dislike gourmet makes is because she didnt look happy doing it/was super stressed especially as time went by and essentially would skip episodes every now and then but these videos I love! Shouldve made her own channel long ago!

GM started good but in the end they purposely made Claire suffer for entertainment. Just look at how Dan (Director/producer) started to treat her, like throwing ingredients at Claire (wtf).

I've made this cake 4 times now since buying the book in October. It's literally the best cake I've ever eaten. I've never been a big frosting person but the browned butter frosting is AMAZING. could eat a tub of it by itself. BEST CAKE EVER

In the US the term raisin is a catch-all. Everywhere else we have sultanas, currants, raisins etc, and all refer to sun-dried grapes of differing sizes

OMG JELL-O SALAD! More than half the people I've told about Jell-o salad in NY and NJ have no idea what I'm talking about, and give me strange looks when I explain it. Claire!!! This recipe is incredible. I’ve been craving carrot cake and as a fan of yours, I’ve had this recipe stored. Well, I finally had a reason to bake a cake and I walked away feeling so good as everyone raved about the best carrot cake they had ever had. This coming from generations older than me and people who didn’t think they liked carrot cake. Biggest compliments were about the moistness of the cake and flavor of the frosting.

Just used this recipe with cupcakes, I baked them for 35 minutes, used a cream cheese glaze. It’s so good , the texture was perfect ( and used a hand mixer ). Definitely worth the effort !

IIRC she lives within a few blocks of Central Park. It came out in a BA video. Rents there are $$$. She could be in the 5 boroughs and have more space for the money.

I think anything Claire makes would be outstanding because she simply wouldn’t have it any other way. I think she will fast approach the “Martha” status. I’m glad she can now control her own destiny. Hi Claire, I asked for and received your book for Christmas and I just finished reading it. I LOVED it!. I have never had a baking book make me want to start with the first recipe and just continue through the book. Now if there were more people in my pod than just me and my son. Thank you. Everytime i see someone, in special a US person, doing carrot cake, i cant help myself but ask for them to try and do the brazilian version of carrot cake just for the funzies of doing something completely different for them but absolutely traditional for the brazilians.

@@Emily-pg5oe first, we shred and beat the carrot into a liquid with the blender, then we add a neutral oil, all purpose flour, baking powder, sugar and eggs, mix everything together and bake it. Then the thing most people love: we make a chocolate ganache to top it. The cake is really smooth, soft and aired and the chocolate ganache is silky and it bleeds into the hot cake. This recipe is so traditional that almost every brazilian knows it by heart. If you wanna try it for yourself, im pretty sure there is a lot of blogs that have translated it for you, and even some videos on youtube that i have seen trying it and giving the recipe too. I reccomend you try it, but im suspicious to say it lol

Yes to the fridge tour but make it a way to cull items that aren't needed or teaching how long something can be refrigerated.

OH! I am a lifelong Clevelander, and my mom had both those books! Such memories. They were sold to support the Cleveland Orchestra. Mmmm, “Snowy Night’s Soup” was a family favorite. 😋 💕

I try not to get intimidated when Claire says a recipe "isn't THAT complicated" because it's generally true and always worth the effort, like with the oat pecan brittle cookies. This recipe is a favourite in our household. Great video, Claire!

I made this cake for my mom’s 70th birthday this past weekend and it was SO DELICIOUS! She had requested a carrot cake and this one seemed like a good choice. Regarding the brown butter, I actually put it in the fridge to solidify and then let it come to room temperature again before making the frosting: it worked perfectly without having to risk the frosting being too runny. Anyway, a really good recipe and it tasted amazing! My mom loved it!

Carrot cake has always been my favorite cake! My mom made it for my birthday when I was really little (probably because she wanted me to have a healthier cake) and I've always adored it. I can't wait to try this recipe for myself. We agree on a lot of our preferred flavor notes too ☺️

Just made this for my best friends birthday this past Saturday. He said it is the best carrot cake he ever had. The spices are perfectly balanced and really come through. I can't do gluten but I love baking so I bake and share. Since I have to know how things taste I take the wine tasting approach with anything I bake. The cake was shared with neighbors and the birthday boy took a generous amount of it home. One thing I did try was brushing bourbon on a part of each layer, I don't think i could really taste it though and it made my cake crack a bit. I have to read up on the best way to add booze to a cake. Not that this needed it really. Either way there were a lot of happy carrot cake recipients. I used to do my best to keep cookbooks neat and tidy but now I feel it's a sign of how loved it is and this one already has a few marks on it. I honestly don't think i've sampled cake this good. Be warned, the icing is morish! Astrid I too could only enjoy the frosting and admit I pined for the cake I came to know through that small cherished spoonful. Such is the cross we bear. Oh my dog loves carrots so had a blast running back and forth eating up carrot bits as I grated, he also had some in his fur. Fun for the whole family and going on my list of frequent cakes to bake. Thank you for this beauty!

I LOVE that she specifies how much batter should go in each pan. I hate when recipes just say “divide evenly into three pans” and I have to do the math myself which never goes well 😅

Claire, you should try the carrot cake receipt most common in Brazil, the way we make it the cake actually comes out orange! And we usually make a chocolate cover for it, it is AMAZING!!

My 3yo daughter loves watching Claire's videos. Her all time favorite is the croquembouche video for Munchies. This is her new favorite. Whether she is sitting in her play food truck or in the bath with her cooking utensils, she is always trying to bake something saying she is baking like Claire. "What are you making Vivian?"
