Here's a really great recipe for a lentil stew; hearty and delicious. Can absolutely be made vegetarian too. Great for cold winter nights.

Looking forward to trying this. I would like a little explanation on "double broth" please.

Oh, sorry if that was not clear. I was saying I start with twice as much broth as I want for the soup, and then reduce it down to the quantity I do want. Like if I need a quart of broth, I start with two quarts, boil it until it's 1 quart, and that's what goes into the soup. So twice the amount of flavor! (I am doing this ahead of time...when I make broth it starts out as a about 1-1.5 gallons and then I reduce it until I can fit it all into a quart jar.)

Thanks for this recipe. I love lentils. But I wish you could have shown us the meals as it was cooking, like the ground beef. But either way, great looking recipe.
