Indeed. Ben and Kush are what i like to call, instructor chefs. They know what they are doing, and can explain it to you so that you can see what they are doing and why. The both of them remind me a lot of Alton Brown. I don't want to just see great chefs making great food. I want to see how i can do it too, and understanding the science behind the cooking makes it easier for me to understand. Don't tell me to do X, explain why X is the right choice for this situation. That way i can understand why the rules exist, and when breaking the rule is a good idea.

@@PeterRavnRasmussen If I were Barry I would have an F1 radio message from 2021 in my head on loop. Checo Perez's defence lost Lewis Hamilton 10-12 seconds in the 2021 Abu Dhabi Grand Prix, his teammate Verstappen told his engineer on the radio that Checo was a legend to which his engineer responded: "absolute animal". Perfectly describes me looking at Kush making the duxelle with one hand and cooking a fish with the other.

Yeah, Barry did good, he can´t beat himself up because he doesn´t perform like a chef (yet). What he could work on is more multitasking. The chefs come into the kitchen, take a quick look at what´s going on and then think about what to do next while doing some other stuff (chopping etc.). Normals usually flap around for a bit before springing into action. Which is totally understandable - but could be improved.

You can see the professionalism with all of the chefs because they think ahead and they prepare the dishes and the next steps for each other instead of just taking one step at a time. The best example was James setting the scene while already thinking about Kush being able to finish everything off in the end. Everyone else was able to take it from there because they were trained to do so. Watching them working their cheffy perfection was really amazing!

The crew literally put them in the most uncomfortable order. -James is good at plating and doesn't like going first so he's first. -Ben loves going first and setting the direction so he doesn't get to and is put second. -Barry is put into arguably the most high pressure position of third because he's gotta figure out what 2 chefs have left him with and complete it without ruining it under a time pressure and is in the exact position to potentially make or break the dish. They didn't put him first because all the chefs would then be able to either have a lot of time to make what he did good or to ignore his contribution and start down a different path. They didn't put him last because the chefs would have probably been able to complete everything before his turn and he'd just have to plate and amongst the normals, he's a decent plater. -Kush didn't want to go after Barry for obvious reasons hahahaha.... But Kush absolutely saved it. Walked in, access the state of everything, knew what needed to be done, went into a controlled turbo mode and got it all done. In time. That's a damn good testament to his training and depth of experience.

Kush's performance has thus far been the highlight of my Christmas. I'm a professional soux chef and I really felt Barry's pain standing with titans like that. Kush is just.......I have no proper words for that kind of perfection.😍

This was delightful! Barry's humility was actually quite refreshing, and I don't think he did _too_ bad. I think he could've given himself about a 4 without any shame. Kush is a freaking monster! That is all. xD Edit: Liked it so much I watched it twice! Really fun to see the chefs really unleash on one of these!

Honestly everyone did really well from James with the plan, Ben with the follow through, Barry moving things along as they needed to go, and Kush tying it together and basically making a main in 6min! Kudos everyone and a merry Christmas!

@Aliennumberb
@Aliennumberb Жыл бұрын
@@indigova I disagree, I feel all of the chefs worked as if they were working with chefs and Barry got a bit overwhelmed. It feels like we saw a glimpse of Ben cooking without the hand holding he normally gives the normals and it was eye opening. For instance Barry re-hydrated the potatoes instead of putting them in the oven (Ben did say they were just to parboil in the water not cook), he tried cooking pig's cheek which he didn't have time for (he thought they were something else), he almost burnt the apples that he started and didn't add any of the apple related items in his time (the juice, caramel, sugar), he missed the clams and the grapes, I also think he almost burnt the garlic he spent too much time mincing. In all fairness to Baz I think this was just first time jitters and I do feel that he was dropped in the deep end with just a sous chef apron and a dream, but I think he should give himself more credit than a 1. He realized at the end how things were coming together, but was out of time. He's also the only one without any experience in a professional kitchen. I would like if they did this again, but gave Barry 20 minutes to come up to speed.

Can't let the food not taste good, even when the point of it is just to entertain people who'll never smell it or taste it. Respect.

I've been reading the incredible Salt Fat Acid Heat by Samin Nosrat, and Kush put on a masterclass in how a professional chef intuitively reaches for each of those elements! Realizing that literally everything needed salt and using vinegar in almost every dish to add freshness and balance out the heavy flavors of all the fats being used to salvage a mess of a kitchen into a well-balanced and enjoyable meal (even though it sounds like from his ending comments that he would have preferred to have a little more time to perfect the seasoning balance) is an actual superpower, and one that I'm hoping I can come even close to imitating someday.
