Down Under it's spring and the herbs are going gangbusters. With a wet, cold front due the wood fired heater will be on so I shall make this up. Wonderful product and well produced video. Thanks from Oz.

I had an extra bulb of roasted garlic and decided to use that. Ratio of salt was higher than 1:1, and I added some dried parsley as well. Was very moist as I'm sure you can understand, but I put it in an oven after I had cooked something else and left it overnight. Had to re-grind in the morning, but was delicious and I am definitely going to roast extra garlic from now on (I wrap the bulbs in tin foil and when roasted I freeze them without peeling, just leave in foil and put in plastic bag).

I've never dehydrated it before, but I would set it at the lowest possible setting to ensure they retain as much of their awesomeness as possible. And I use it on EVERYTHING. Lol. Anything you would use salt on. Enjoy!

I personally haven't used dry, but a bunch of people have after watching this video and the feedback is good! You might need to use slightly higher quantities of dried herbs, but I would tinker with those ratios to see if you get the flavour/balance you are looking for.

I don't put them in the oven at all! I let it all dry out on the counter for about 24 hours.

I've only ever used a food processor. But I imagine you could chop the herbs very finely and mix by hand.

Isn’t it easier to first completely dry the leaves of the plants and mix the already dry ones with salt, then they will no need to be dried after mixing with salt

You absolutely can do that but I have found that the flavour is much better when you use fresh herbs! Just a preference of mine :)
