Join me as I make 5 recipes for the week ahead. Meal prepping does bring peace to your mind, when you know that the protein components of your meals are already made ahead and all you have to add are the sides to complete each dinner.

Thai Chicken Burger Patties
500g chicken mince
1 heaped tsp crushed garlic
1 heaped tblsp thai green curry paste (or curry paste of your choice)
salt and pepper
Mix all of the above ingredients together until well combined. Into an oiled pan on a medium heat, place approx 1/3 to 1/2 cup of the chicken mixture and shape to a pattie with a spoon. Cook approx 4-5 minutes each side, until brown and cooked through (juices of the meat should run clear)
Serve as a burger in a bun with fries or enjoy as they are with salad or veges.
Sausage Casserole
450g sausages of your choice (I used Italian flavour)
225g bacon, diced
225g or 1 x large onion, diced
1/2 tsp dried thyme or oregano or mixed herbs
1 x dried bayleaf
1 x clove crushed garlic
1 x heaped tsp flour
1/2 pint or 1 x cup red wine (or the same liquid amount of stock)
175g sliced mushrooms
Brown the sausages in oil on a mediium heat. Take the sausages out of the pan and set aside. Lightly brown the bacon and onion in the same pan. Stir in the flour and cook down with the onion/bacon mixture for one minute on a low heat. Gradually stir in the wine or stock. Place the mushrooms, garlic, bayleaf and dried herbs into the pan as well, and then nestle the browned sausages back into the pan. Simmer with the lid on for about 30 minutes. Serve on mashed potatoes with green vegetables of your choice.
