man I’ve missed ya! I brag about u to everyone that will listen...it is so nice to see and watch ur demos again. I find ur work stunning and perfect. How was Spain? Thank u agin sir. Mark, you’ve been missed, understand that things aren’t easy for you at the minute as they aren’t for most people. Looking forward to restrictions being lifted and HOPEFULLY more videos of your artistry. I learn so much from you each time you post. Different techniques, how to perfect your art. It starts out relaxing. Nice and calming! Untill your brain tells you that you can smell it baking. And the fresh yeastiness of the dough. Yeah relaxing not so much then. So at 3am you are going to stare at the ceiling and listen to your stomach growl and keep the neighbors awake. Or you find yourself getting up and baking yourself and keeping the neighbors awake. I have a bread machine and I know how to use it! The neighbors hate me!

Venita, the main change I made was I replaced the electric oven and one of the gas convection ovens with a propane deck oven.

i have a problem with my dough divider. everytime i need to recheck each dough ball weight if its the correct weight. i don't know if the machine or me is the problem 😕

Hey when you egg wash your croissants use a spray bottle with egg wash in it it’s a lot faster

I use instant yeast and Gold Medal Harvest King flour for most of my baking.

I noticed you should give like a two month course in open a school Less craziness I’m in the same business I don’t do it anymore but you do a great job it’s different what you do you’re talented or a good book step-by-step I would say five series book and relax live your life enjoy be safe
