Bought the 7” Demeyere, and have not seasoned it yet. Trying it on our current electric range, eggs stick to it. Any suggestions?

I just purchased the Atlantis 10 piece set after buying the cafe induction double oven. These are beautiful and high quality. I feel this is worth the investment. They will build up the arm strength lol ! I also have a set of le creuset non stick pans. Love my cookware ❤

hi there! I’m seriously thinking about going with the GE café induction range but the single oven what are your thoughts so far, why’d you go with the double instead of the single. Can you give me any advice or input? Would you do it again thanks so much appreciate any help you can give

I have Industry V and love it! Never tried the Atlantis though.

Excellent review - content was rich and it wasn't 20 minutes. Very concise - I am sold on the Atlantis over Industry - I use cast iron so that won't bother me (weight) - and I want the induction capability once I pivot over to it. Gained a subscriber based on your written and video review today - it was high quality.

Good choice. Hestan is another good brand to consider. They have flush rivets.

You will not regret it. I love mine. Even stopped using carbon steel and cast iron as a result. No nonstick pans are part of my kitchen gear.

Can you make a comparison between Atlantis 12" fry pan, and Atlantis 11" Atlantis Saute Pan? They are similar size. But the metals are different. the Former has 3 layers of aluminum, and the latter has copper and silver. That seems like a significant difference.

The price difference is not that big here - 150€ vs 120€ so went with the better one. Thank you for the review tho, was very helpful to decide

Great Review. Thank you. Demeyre Proliine/Atlantis fans and owners always boast of heat retention., and deservedly so. They never talk about Heat Response. Which line is more responsice to heat change? It seems that chefs prefer responsive pans but what do I know. .. I would like to know what pan would give me a great sear but also would not make me wait 10 minutes before it cools down enough so I can through in the finelly chopped shallots without them burning. I if am just goung to sear without making pan sauce I may as well use a $25 Lodge cast iron. Could you educate us please.

Glad you liked it! Industry is thinner so it heats and cools faster. In other words, Industry is more responsive. All Clad had a very thick line for a while. It was as thick as Atlantis but got discontinued in 2014 or so. Great video review, Andrew! Hope you are going to review some Hestan!

I just started listening to your reviews - they're very well done and informative - thank you. I really like my Atlantis 12" skillet's 7-ply, even though it is very heavy. I have a QUESTION: For saucepans and a saucier, do you think the 7-ply Atlantis is worth the extra cost over the 5-ply Industry? Thank you.

Thank you! In my opinion, the thickness isn’t as important for those larger pots because you’ll be using those mostly for liquids, and the extra heat retention isn’t as necessary.

Great video. Especially breakdown on the layers and weight. 2 questions: 1) For the industry you mention the bottom is 18/0 but for the Atlantis you list "Stainless" only. is is also 18/0? 2) Do you have any insight into the slightly different naming on what appears to be industry 5 at various online outlets? I.e. I have seen silver 5, 5 plus, industry5, all Demeyere.

Thank you! The Atlantis also has 18/0 on the bottom. I believe those are all the same. Sometimes retailers will alter the name slightly but the official name on the manufacturer’s site is Demeyere Industry 5.

The information is not quite correct, altlantis is the name of the demeyere 7-layer pots, but the 7-layer pans are called proline

You’re right but both are within the “Atlantis” collection, they just call the frying pans and sauciers “Atlantis Proline”.

All good. I assume all the cladding is scientifically calculated and not just a fad. But I cannot get my head around why there is 3 layers of aluminium on top of each other between other layers. Surely 3 layers would suffice. Watching your reviews has made me wonder what professional chefs prefer to use in a busy restaurant.

I don't understand the exact purpose of having 3 layers of aluminum, but it could have to do with preventing warping or delamination during thermal stress. The center layer is said to be an aluminum alloy.

Professional chefs use a variety of pans, but carbon steel are very common.

Think of plywood. All of the thin layers of wood bonded together makes a very strong piece of plywood.

@@Lam-he6mj Wood has linear strength. Plywood is laminated in cross sectional directions to give it lateral strength. Metal has molecular grain but has strength in both linear and lateral direction. Cast iron has spheroidal grain giving it strength in every direction. Either way you look at it cold seared steak is the best.😋

Austenitic stainless steel is not magnetic and won't work on induction. Martensitic stainless steel will. Both are steel.

Why do they have three layers of Aluminium? Why not just have one layer that is three times as thick? Same question regarding the Atlantis range with their three layers of stainless steel.

Streamlined manufacturing... It's more efficient to make single plys of aluminum and then assemble as many plys for desired effect for their different lines (Atlantis, industry, essentials, etc). If they made one layer three times as thick, they'd need a separate machining process to make that one specific thickness.

They do have a weakness. The can only handle 500 degrees, so for searing you'll be using carbon or cast if you have a brain. And for sauces as you said, it's mostly liquid. You don't need as much weight/thickness. Anything with copper & proper flame is still king imo....
