We're back, and trying a new cheese today! It’s time to try some green cheese (Derby with Sage). This is a cheddar style cheese that gets its striking green color from spinach and sage. It is traditionally a cow milk cheese, but we are using our raw goat milk. All supplies can be found at cheesemaking.com and we are basing our recipe off the one on their site.

Sage Derby is phenomenal, well it was when I was a child. In the UK we can now only get cheap factory sage derby or pony stuff with a tiny vein of sage

I was so pleased to see the notification that you were back and making cheese vids again. You were missed! Derby Sage is one of our favourites and I make it 2-3 times a year, but not in the batch sizes you manage. I age mine for at least 6 months and it is delicious. I'd be interested to hear how your affinage methods turned out when you were experimenting with the self seal plastic wrap. I found a supplier of the wrap here in the UK but haven't yet tried it myself. Great to see you back, and to know that you are all well.

I was wondering if you could do a video on tattooing Lamanchas? Hopefully next spring we will have a few babies out of our older doe. I havent seen any good videos out there on how to tattoo the tail web area.

Fantastic video, like all of them! Being a pedant from the UK, it's pronounced `darby' - it's a cheese that originated from Derby in England, UK (also pronounced that way). Sorry - I can't help myself, it drives my American wife mad.

Where do you dry the cheese for two days before you coat it? Do you age in a wine cooler?

I leave it on a rack on the kitchen counter.

If your basement is around 54° F it will be perfect. If you live in a hot climate like me, you will need to age it in a wine fridge.

Your explanation is good .but it is better to make writing main steps :so we read : quantity of milk - litters - temperature - acidity time - and so on :;,-- ---'- -.

@@HammockHavenFarm it is also good for us to watch the video more than once, taking our own notes as we go! That is a great learning technique. Learn by what you see, what you hear, and what you do.
