Thank you again for making this cheese video. I made your Gouda, and now you are walking me through Derby and the Mysost is going on the back burner. These videos are really helping me to understand the recipes Cheesemaking.com is putting out.

Thank you some are better than other and I find the one I like best in Gouda which surprisingly is one of the easiest to make.

I find that I enjoy the process very much and it amazes me that it really isn't that hard to produce a reasonable facsimile of the real thing and first time around. I'm too busy this time of year to do very much of it but it is a great wintertime hobby.

Wow Dale, that looks gorgeous! It looks almost creamy too. I love the little green lines, even more than the big dark ones! Very unique looking. I actually love the drama of "will it work" that I get from your cheese videos, LOL it's exciting to me. No matter how good you are at making cheese, even the pros can't make it work every time. That was a fun video, and I find myself wondering each time of see one of your videos on cheese making, is it this time that it turns into something that changes cheese making forever!! LOL Hey, I can dream right? I will be starting my cheeses this fall, when I finish tearing this house apart, but I can't make cheese when my son is changing that terrible hood over my stove, and moving everything in the house to get it in order. At least I will have a nice clean kitchen again, and I sure wouldn't make cheese in a kitchen the way mine was. It would give me nightmares of germs and the gallons of Clorox I would be using to kill them. After all this time, I still can't get used to a rented house. I can't wait to get into my own home again. Thank you for a great video, I loved it. Sheila

With me it is always a question of will it work LOL. Hope you survive the reno I know the experience well my house was a construction site for almost a year just before I retired. A neighbour who is an excellent carpenter was doing the work but he has a full time job so was working for me on days off etc. he did a great job but I thought it would never end.

if you wax or vacuum seal cheese, you do not have to worry about humidity.

Enjoyed watching the cheese making process. Dont have the time or space to try it myself but appreciate the effort that goes in to making it. Interested to see how it tastes after it has aged a little longer. Thanks for sharing.

Never seen that cheese but looks nice. Derby is only about 50 miles from where I am from.

It certainly looks like a nice cheese Dale, I'm glad it turned out okay. As to the pronunciation, I don't think it matters, either are probably correct, depending on where in the country your standing at the time! Thanks for sharing.

Thanks Kevin, of the hard cheeses I think I like the Gouda best. Too busy with other things this time of year but I will make more of it in the fall.

Interesting, Had to laugh when you said it fell apart but it turned out good in the end. Have you ever had this cheese before, Its a new one for me but no surprise there.

Yes it almost got trashed but I decided to give it one more chance. No I've never seen this cheese here before but there is a wonderful cheese stand at the Fredericton Saturday morning farmers market with cheese from all over the world if I ever get back there again there are several cheeses I want to have a look for.

dale . i really enjoy your cheese videos . your inspiring me to give a go at it . i was just wondering if instead of sealing it with wax maybe use sran wrap ? . or does the bit of air that would be in with sran wrap be a problem ? or maybe vacume seal ? . just thinking of things i have readibly available . thanks so much for shareing these videos with us

Thank you. It really needs to be air tight and adhering to the surface of the cheese also the heat of the wax kills any mould or bacteria that was on the surface of the cheese.
