On the first episode, LA Chargers defensive back Derwin James goes from the gridiron to the cast iron to make a steak. The two chefs debate about medium rare vs. medium well, his love for barbecue sauce, and a delicious mac n cheese recipe.

CAST IRON STEAK
Ingredients:
• 2 11⁄2"-thick New York strip steaks
• Black pepper (if desired)
• 2 tbsp neutral oil
• 5 tbsp butter softened
• 3 cloves garlic, smashed • 4-6 sprigs of thyme
• 1-2 springs rosemary
• Kosher salt
MAC & CHEESE
Ingredients:
• 2 tsp. kosher salt, plus more
• 1 lb. dried elbow macaroni
• 1⁄2 cup (1 stick) unsalted butter
• 6 Tbsp. all-purpose flour
• 4 cups whole milk
• 3⁄4 cup heavy cream
• 1 Tbsp. mustard powder
• 8 oz. coarsely grated extra-sharp cheddar
• 8 oz monterey jack, shredded
• 4 oz gruyere, shredded
• 2 oz. grated Parmesan
