I dont get how Product Design is different than UI/UX? There is always some sort of a crossover between them.

Yes there is lots of crossover. But historically, Product designers service the business model at a higher and more strategic level and the end customer. Whereas UX/UI designers will often make choices that advocate more for the user (not always the same as the end customer). The term product designer came out of Silicon Valley startups where often it was one generalist designer. UX/UI emerged more in enterprise and larger companies that had teams of specialists. These days there is much less distinction. I always defer to the job description and company to understand the nuances.
