Fantastically laid out, Jonny. Despacito is a perfect example of a pop song where much of the melody is in the form of repeated-eighth notes, which sounds so awkward when playing exactly as is on piano. You've definitely provided some great pianistic techniques to strategize working around this. Additionally, you explain so well the tactics you employ to crescendo the song from verse to prechorus to chorus to later in the chorus. Even though you arranged this song specifically in a Latin style, the overall approach you've described is undoubtedly helpful in other styles as well.

nice brother !!! really amazing ! i wish i will try my best to play like you , i play piano in all keys 12 majors and minors but i always fail to play with artist/singers due to inability of knowing next chord to go to since i miss choice in the rest 6 chords (not 11 ones because from many musicians here in home country play alot songs with just 7 chords (7 notes namely do re mi fa sol la ti do ) , i just want you to give us video about ear training and how you figure out melodies or chords according to how you listen his voice going on
