It's because lemons, like milk, are acidic. If you've ever cleaned a stainless steel pan with lemon, you will find you can get a really nice clean...but for porous surfaces like your tongue, HOT WATER is better. Just sip slowly to avoid burning, but the water should be hot enough to melt away the spicy oils

The best remedy is hot water. Or hot lemon tea. Small sips to wash off the oil. Capsaicin is an oil that sticks to your tongue, which prolongs the pain. Oil melts off with hot water.

There's a little irritating feeling with drinking hot water when you're already in pain, but if you want the fastest remedy, definitely hot water--sip slowly to avoid burning your tongue. It should be hot enough to melt the oils that have soaked into your porous tongue. Even better if it's just hot enough that you can swish the water around a bit if your whole mouth is on fire.

When drinking hot water after eating spicy af food there’s an initial absolute burn when you drink the hot water and your mouth and existence is on fire for a millisecond and then it’s all good.
