The cheesecloth generates heat for faster cooking. And yes any pan will work.

The acid in tomato reacts with foil, so I wouldn't advise that. You can just turn the rice over a few times and it should be fine

You add the beef, kielbasa and chicken in right after you add the water. The shrimp goes in at the last minute, when the water is fully dried

I was thinking,maybe you could have cooked a soup with the shrimps and meat,before frying it;in that you could have used the soup to cook the rice. I preferred washing rice at all times before cooking it.
