How long does a job like this normal take for you guys to complete?

It all depends on the condition of the paint, usually 1 person can perform this in 1 good day, but that’s only if the paint doesn’t need more than a single stage machine polish.

Depth of the paint I think , but I don't know what unit it's measured in.

They are paint depth gauges. They basically tell you the thickness of the paint from top surface to the metal.

Why the small polisher?

Depends really on the area your working on, if it has inverse curves or sharp edges you may "stall a 5" DA easily making it in effective at cutting stages.
