What is cool about Dexter, is they really are US made--how hard is that to find anymore? And a simple sharpener that A, works, and B, is small and portable, a win win. So it must be expensive, right? Wrong, reasonable price--my Dexter is the best of my fillet knives by a long shot and I mean--a real razor at work. My two cents. Tip, keep a "steel" handy too. No, it does not sharpen but when (not if) you hit bone, it turns the edge, and the steel straightens it out, and back to work.

I keep a spyderco ceramic stone always handy for that purpose.

@@CaptDavesSportfishing I see butchers with the steel on a "quick draw" thing on their belt and am amazed at how fast they straighten, and keep going. Of course, that leads people to think--and call it a "sharpening steel" which of course, it is not. Re. the ceramic, that material is amazing IMO.

@@jimquantic yeah.....I know what its all about, I'm a knife junky. This is just my ''fish cleaning side''.....heck that black coating came off both anyhow. I think since, they fixed that process.

@@CaptDavesSportfishing I am too--I use now, a "kitchen shear a lot too, to break bone, not hurt my fillet knife. And on both ends you have options, the fine fillet, and the large hack sort of knife, that goes through small bones. I must lay out three knives and shears when I go to work on large salt water fish, and need em all. Tweezers too come to think of it. Tight lines.
