I love the fact that you say yes work hard but work smart. You are one of the only people teaching food preservation that follows the safety rules completely. I trust all your recipes even though believe it or not I look up some of the stuff to be sure it’s OK. Why? Because I have watched so many channels of people who say darn it granny did it this way so I’m gonna do it this way too. It didn’t kill granny I’m sure it won’t kill me. I’m not a person who wants to use emotion instead of intelligence when it comes to food safety. I like your scientific mind and you’re a great teacher. I look forward to every one of your episodes. As a former purist, who has been organic gardening for almost 35 years and still do most of my vegan cooking from scratch, as I get older, I want short cuts and can let things be a little less than my desired ideal. I find myself much happier being less critical. If you don’t like what someone else is doing, you don’t have to watch their channel or you can offer a positive solution, like dehydrate organic veggies or just be quiet, let it go and let them be themselves, ( unless they are so outrageously harmful that they must be stopped). So please be happy and make the world a better place for your unique self having been here. ☮️

For anyone watching I’ve been dehydrating fresh citrus 🍊 just in case the supply lines break completely… citrus contains so many vitamins… I ran a trail and put a dehydrated lemon slice , lime and orange in water .. they rehydrate wonderfully and I could even eat the orange flesh !!

Stabilizing foods by dehydration also lets you buy big packages then make small recipes by portioning. My wife and I are now retired. I find myself cooking smaller meals by preference, which is also good practice for times of scarcity. Thanks again for this and your other videos. I appreciate your hard work.

@@20greeneyes20 I put away lots of foods in vac bags. Only troubles are dried foods that have sharp ends or corners, causing pinholes in the bag. Line the bag with a paper towel first to provide padding between food and bag. Dry jerky is one food that routinely punctures the bag without padding.

@Green Eyes @ green eyes. I'm new to this but we don't have an electric pump. We bought the hand pump that comes with attachments for the smaller and larger jars. Used it last night and it works great. After 4 pumps, you feel resistance. I did about 10 pumps to make sure. Seals were good and tight. Also put in an 02 absorber to be safe. I think as the other commentor said, I would be hesitant with bags as this dehydrated stuff gets brittle and sharp. I'm brand new at this, so do your research. Blessings

I just found your channel and LOVE it! For extra protein, I pick stinging nettle leaves and young shoots from my land, it grows everywhere. Stinging nettle is very high in protein content, along with other vitamins and minerals. I dehydrate my foraged harvest and then crumble it into powder. It is good to add to soups and stews. I even make stinging nettle soup from fresh leaves, black rice, potatoes, carrots and onions.

I don't blanch the nettle since I am only using young leaves and shoots. The variety that grows on my land doesn't really sting very much. Freezing or heating helps break down the stinging hair on the nettle. I just did a batch and used the grinder with a sifter to grind it into fine nettle flour. Next batch will go for a tincture: both with vodka and food-grade glycerin (alcohol free).

I hadn’t even thought about dehydrating like this. I’m definitely going to try it. I already have the equipment but have not tried the vacuum sealers. Once you get your basics the cost should go down .. I’ve been gardening for years … I suggest using heirloom plants so you can harvest your own seeds … also I buy seeds in bulk form certain types of plants like green beans … I do not have a tractor I do all the work with a rear tyne tiller I bought used … it’s definitely hard hard work but eventually I’d like to move to the no till system …good luck!!

I save seeds and start my own plants and store as much as I can, I also do this, I buy veggies when on sale and dehydrate them. Don’t put all your eggs in one basket :))

Because peas have so much protein I make pea powder for my mother to add to her meals. Having a lap band, she finds some vegetables get “stuck” in the folds of her stomach. So powder really helps.

Rose I was so glad to see this particular video because this is one of the things I’ve been planning to do. I’ve used my vacuum sealer but never on jars so I’m so glad I got to see this in action. I’m looking forward to your onion video because I love onions ❤️. I think dehydrating and canning is so important in case the power grid goes down. I think too many people are depending on their freezer full of food to live on. Yes you can eat some of that right away if you have the means to cook it, and you would be able to can some of your freezer items if you have a gas setup like you have🥰.But that’s just one more thing to have to deal with in that already stressful situation. Agree 100% on the ease of using frozen vegetables. Generally cost effective, for those of us who can't garden anymore. Especially with a discount club membership. Buying in bulk, from their frozen foods selections, may be the most economical unit. Always pays to shop around, as regular pricing there may be higher than a good sale elsewhere. I'm reducing my reliance on our freezer by dehydrating things that rehydrate quite easily. Canning, when appropriate, for those that don't. Also, making "Instant" rice by cooking large batches in my rice cooker with no sodium chicken stock. Then, dehydrating the rice. Suspect that will work well, with your peas and rice, too. Thanks for sharing.

@@sofializzy4519 Yes, that's part of what makes it so easy. Before opening the package, make sure the vegetables are broken apart. Gently pound on the counter, if needed to break apart clumps of frozen peas for example. Then, open and spread them on trays. Remove any ice clumps that you may spot. Put the trays into the dehydrator. The food will thaw & the dehydrator evaporates any moisture from accumulated ice crystals.

@@SusieQ711 Yes, you can dehydrate most canned vegetables. All the processing has been done. All you have to do is drain them. Some you may want to rinse, such as black beans, for example. Spread on your dehydrator trays. Drying temperature is generally recommended to be around 125-135 F. Use the recommendation in your dehydrator manual. The Backpacking Chef dehydrates canned beets because its easier than working with fresh. He also makes something called Sweet Potato Bark made from mashed potatoes. Canned ones will work well for this, too. Check out his channel for interesting ways of dehydrating foods for the trail. They work for other uses, too! That said, generally it's better to use fresh or frozen vegetables because of the processing canned foods have already gone through. Some nutrients are loss through canning. Canning also affects the texture results when compared to fresh or frozen. That said, canned pineapple slices or chunks have a limited shelf life because acid in them corrodes the can. Rather than tossing them before they acquire a metallic flavor, dehydrate them for tasty snacks. And/or incorporate into your favorite granola or trail mix. Enjoy exploring what you can do with your dehydrator. Hope this helps.

I have had trouble sealing my regular mouth jars. Someone told me to put the lid on and top it with another lid, upside down. The bottom lid seals and the extra one just comes right off. It works every time!!

After seeing this video I went and bought 20 pounds of frozen vegetables 2.oo a bag for 2 pounds and a round Cosori dehydrator on amazon 5 tray and the extra silicone sheets fir the trays and round plastic tray sheets for doing dehydrated eggs. I've been thinking about getting a freezer since the freezer drawers in my fridge are always full. But now you have me thinking that a dehydrator is the smarter appliance to buy. That and canning equipment. I've been learning so much from your videos.

I agree. The freezer is dependent on the grid, while the dehydrated isn't. Cheaper, too

My husband's been complaining that I need to clean out the freezer. It really was a disaster, so I unloaded most most everything shelf at a time cleaned, took a lot of my frozen vegetables out to the dehydrator and filled up the trays. I watched this video just to make sure I was doing it right and I'm all set to have some nice dehydrated vegetables for some healthy meals later. Thank you for your thorough concise instructions I appreciate you and your years of wisdom and your willingness to share it.

Sometimes putting a 2nd lid on top when you are vacuum sealing the jar helps the process... the 2nd lid wont stay on but it seems to work better using the double lid method

I like your style, Pam. In my 30’s I decided to go back to school while I was still working full-time, and I promptly took on the mantra of, "Sometimes good enough is good enough!" I grow as much as I'm able to (mostly in friend's yards, since I don't have my own), but I've also been using frozen vegetables a lot lately for canning. Produce from Aldi, too. Preserving is about being resilient, not perfect. Right?

@@katharineroeder3657 I think that may be a question for Pam, in which case, you might repost it in it's own comment, as I don't think she's alerted to replies to comments. If it's for me, I honestly don't do much dehydrating, but there's no reason why it wouldn't work just fine. I don't own a vacuum sealer, although I do think they're a great investment. I've seen lots of people using the foodsavr jar attachment, purchased alone, and pumping it with a brake bleeder. That seems like a genius idea to me.

Aw a back up, if there's really a grid down situation, I have a manual vacuum pump to replace the electric one. It has a gauge, and I take it to 20 PPI. It's definitely work, but I've had manually sealed jars last for years. This was a great instruction. Thank you..

I fill mine to the head inch space, then in the head inch space I add a clean dry coffee filter put the canning lid and vacuum sealer adapter and Foodsaver vacuum seal away. And the ring lid

Thank you for this vid I preferably dehydrate so my small chest freezer isn’t taken up plus you can prep your pantry way easier by doing this then put in valcumn sealed bags will last way longer 😁 also takes up less space if you use the smaller valcumn seal bags you just open a bag you can use for that week it keeps your veggies good a lot longer by doing smaller bags not opening a large one where you risk humidity getting to them

I had NO CLUE we were supposed to blanch them first! 😮 I did a couple carrots, celery, and onions I had in my fridge just to play with the dehydrator and get used to it!! 🤦🏼♀️ I knew I should have looked it up first! But I thought as long as they were dried all the way they would be good! Thankfully it wasn't much! I'll have to use those fast just to be safe! Ty!!! I'm definitely trying the frozen ones and now I'm gonna search each thing before dehydrating to make sure I do it right!!

I'm so glad that you did this one on frozen veggies. I saw this hack on someone else's video and thought, "I can do that!". I agree, it's much easier to let someone else grow, peel, chop and blanch them. I want to make meals in a bag that I can simply add hot water to any time I need a quick meal. These will be perfect! What type of vacuum sealer machine do you use?

I don’t know if someone already asked this , but I was wondering if you could just vacuum seal the final product in food saver bags . I have a very good vacuum sealer machine that does a great job . Do you think it would keep just as long ? I don’t have a jar sealer attachment and my machine doesn’t accommodate one. ! Loved the video, can’t wait to try this !

Such a great video! You are such a wonderful teacher! I usually don’t post. Tonight I am doing my first Dehydrator project! Frozen vegetables! I love all your videos! I am learning so much! Thank you! My husband has a huge commercial dehydrator that he makes jerky on and it just hit be (ding, ding!) why aren’t I using it too! He has a place in the basement where he does jerky but I don’t go down there often. I started watching your videos & you had a dehydrator one on & I thought my goodness I have a dehydrator! Use it! My husband actually brought it upstairs for me (bad knees) & put in the kitchen! Oh goodness it’s huge! I am so excited! I guess you are never too old to learn new things! I’m 67! Never gardened. Black thumbs! But this I can do! I am so impressed by you guys do! You are living a fabulous life! God bless you!
