I think that it is clear. The national Singapore Chili Crab (with eggs) is the one invented in 1963. Indonesian version is completely different as it is called "Kepiting Saus Padang".

@@ethos- Minangkabau have an entirely different culture from Malay. Their language maybe sound the same but it's not. Minangkabau are living in the mountain and Malay in the coastal. They have different traditional house and clothing. They are separated by Bukit Barisan which sometime its hard for them to communicate to each other in the past. You look at the amount of chilli the Chinese are eating and the variations of dishes they can make but at the end of the day, they all acknowledge that chilli comes from South America. Whereas for the famous kiwi fruit, do you know where it comes from? It's not NZ but China. Nothing rude about it, it's just acknowledgement of the roots of it all and respecting history.

Everywhere has Chilli crab, but who popularised it? Singapore. Our crabs usually from Sri Lanka, the sauce with egg drops, the taste is very uniquely Singaporean.

Exactly! It is the way the dish is prepared, the Crab and the sauce used & served. Sri Lankan Crabs are used to cook the Singapore Chilli Crabs! And even now, Mantou (previously using normal bread) is used to dip in for the sauce!

Growing up in the early 60s in Penang, there are 2 restaurants selling chilli crabs. One near the Tua Pek Kong Temple at Tanjong Tokong & the other one near the Zheng He footprint temple at Batu Maung. The crabs would usually be the sea variety (Chiik in Hokkien) and not the mud crabs (Chiim).

This is 100% true. We have never claimed Chili Crab as a Malaysian dish. AFAIK, it is not a Malaysian 'thing'. So I don't understand why this chef's fighting over it? Personally, I don't find it nearly as good as our Butter & Salted Egg Yolk Crab (Harm-Dan-Nai-Yau-Hai).

Had since I was young, and chilli crab is more like a homemade dish, rather than a restaurant dish now. my mom only cooked chilli crabs at home. You are Malaysian, but which part? Malaysia and Singapore is the same similar country. Many Malaysian Chinese went to Singapore to stay and became PR which whoever invented the local dishes is the same. In the 50s and 60s and even nowadays, many Malaysians (or Chinese immigrants from China, came to work in the S'pore restaurants as kitchen helpers, there is also a possibility that they learned to cook certain dishes in S'pore and later went bk to M'sia to set up businesses. it is also possible that the people of both countries exchanged recipes. In fact ,during those period ,most Chinese were from mainland China, it is very common for them to hv relatives in S'pore,M'sia,Thailand and Indonesia.

I'm in my sixties. My parents were born in the 1930s, in Kuala Lumpur. They had always remembered having chilli crabs in their teenage years in the late 1940s after WWII. It was tough times for them, and chilli crabs were a rare treat that they couldnt forget.

Was it along Old Klang Road? Hai Peng was very popular on Old Klang road in the old days. I recall as a young child eating there in the 70s the mum used to cook alongside with her son who was around 37. The more popular chilli crab restaurants were mostly along this road. The mum there added egg to her sauce and would serve steamed buns and later on deep fried bread, which was my favourite. Whenever my grandmother, family and friends from Singapore we would bring them here to eat Chilli crab, types of crabs used, was whatever was in season but mostly Sri Lankan crabs as the meat was sweeter.

Some Indonesian would fight with words in internet when Malaysia claim something Indonesian, even with some scientific proof, Malaysian always and still claiming something. Example, Reog, or barongan. Some of us just already fed up with their claiming, but most of Indonesian know one thing for sure. That Malaysian themselves is came from Sumatra (Malaya), so we just like "eeeeeughhhhhhh... Them again...".

tbh, if the ingredients are just tomato, chili which most households have, it's quite likely it could've existed long before these "creators". I added tomato to my rice when I was young without having eaten tomato rice before, just like how the sauce is added to bak chor mee, anybody could've experimented with it.

@@andresloft do you know that oral history interviews are also not very accurate? it is because many who were interviewed were also not very clear about it ,they only based on their memories and some even got the dates wrong too. some restaurants may hv started serving some dishes in the past and later included new dishes in their menu but they claimed they started selling that dish from the time they started the business. For example, the lohei dish which your transport minister claimed to be created by his grandfather - they started serving the 冈州鱼面(fish noodles),later served the raw fish dish ( which in the 30s, many cantonese and teochew Chinese eat in S'pore too but now it is banned in s'pore due to hygiene reasons) and later they improvised it and became the yusheng we eat today but who knows when? They claimed since the restaurant started in the 30s ,so this dish must be created by them. That restaurant could not even show pictures of the lohei dish even at a later date(if I am not wrong)

To be honest Malaysian tourism minister are so desperately to promote tourism in malay they said reog Ponorogo from Malay,rendang from Malay,and nasi uduk/ lemak from Malay,bakut teh and Chili from Malay ? They hijacked their neighour country culture and food (indo,Singapore) controversy created spotlight and stage 😅😅,so how the tourism now in malaysia?

Go all the way to Langkawi to find chili crab...wrong reference!...Just in KL it self there are plenty,...Wong Poh rest in PJ, Sai Gong rest in Kepong, Fatty crab in Wangsa Permai, B lui rest in Kepong any many more. Chili crab is easy to cook, cook many time at home too. No secret about this dish.

Bruce Lee invented Jeet Kune Do, Donny Yen popularized Wing Chun, and Ip Man is a practitioner of Wing Chun. Bruce Lee foundation is Wing Chun, but don't mind saying he invented Jeet Kune Do because he did. Do Jeet Kune Do have some technique from Wing Chun, i don't know? So, some old master invented Wing Chun. Chili crab is just a dish and many Chefs can invent something similar no matter where and when. They always say, "I invented it". Yes, you invented your version of Chili crab. Food or dishes always evolving all the time depending on styles, taste, popularity, etc. "Singapore Chili crab" is invented in Singapore and become popular. Malaysia Chili crab is invented in Malaysia and may not be so popular. As long as it taste good, I am all in for it. There is no answer to it, like someone came to you and said, i know the answer chicken came first and not the egg. Next will be Pan Mee, who invented it first? My son told me, there is no good Pan Mee if he study in overseas. I told him yes, eat as much as you like now and please go back to study. What research method does the food historian use to find their conclusion - I hope not by just eating a lot of Chili crabs and talking to people! and what supporting evidence is solid enuf to support the research? Can food historian wrong, of course! Can they be right, absolutely as long as they have good evidence the history of it origin. Find someone 1st generation from China migrated to South East Asia - if he/she alive and have eaten Chili crab before and you will know when this this dish was invented.

Chilli crab was invented by the 4 Cantonese migrants heavenly king chef in Singapore. One of the early restaurant Cantonese chef set up 永春園 Wing Chun Yun at Upper East Coast road. Another chef heavily king also sell this in Red Star restaurant. That olden time, upper east road that stretch is a beach seaside.

When I was a kid in the 60s, my dad used to bring us to eat chili crabs abd ginger baked crabs in a restaurant ran by a fat chef named Ah Luan in Malacca. The look and taste is exactly the same as that in Singapore. Ah Luan migrated to Singapore later. I believe the chili crab originated from him or chefs from Malaysia when they went over to Singapore for greener pastures.

Chili Crab cooking palate have been eaten in the Philippines as Heirloom dishes in the Philippines as far as 17th century, especially in Manila and Cavite, where ingredients from the New World(Americas/Mexico and Peru) and Europe is being brought altogether. Many Heirloom Recipes of many Prominent Families from the Spanish Colonial Times, have been created during 17th-18th century where most of new ingredients first reached the Philippines before the rest of Asia thru Manila Galleon Trade.

It is just good and constant marketing from Singapore like bloggers, STB and programme like this. Why not Singapore claim and promote Bak Chok Mee or Hokkien Prawn Mee? Singapore won’t, because these food are not ‘sexy’ or ‘sophisticated’ enough to have a good narrative as Singapore food

Laksa, Singapore i s arguing who is the original Katong laksa that is basically noodle cut into short strips to eat with spoons- it’s just so that the shops do not need to wash additional utensils. Laksa in Malaysia is about the different taste from different states. They are so exquisitely distinct that reflects the culture of the different States

Originally Sri Lankan brought to Malay peninsular. Over the years, Chinese cooking method used by the vendor/cooker then it became somewhat we see today. It also popularised in Singapore in late 80s

Chili Crab is a singaporean dish. Because whenever I taste it in Malaysia, it has a weird taste to it. Like a fictional taste? That it adjust to suit a Malaysia palate. But when eat it in Singapore, yeah it taste like the original or taste like home. That's how I knew that it must be originally in Singapore. I'm Malaysia but I admit that this is Singaporean dish. Anyway I really love this channel. It teach or give us the knowledge of the roots of our dishes. I learn a lot. But what I don't like is the comment section where there will be a lot claim going on. Well I don't really care, but it does annoyed me. Just enjoy the shows
