The line "There were dragons when I was a boy" along with the rest of that monologue are actually the first lines from the first book written in 2002. The first book started with those words as a flash forward to the ending of the series, and the last words of the last book were those words too. So it was only fitting for these words to be spoken by Hiccup in the final scene of the series.
