Critical flow occurs only momentarily when the flow goes from Subcritical to Supercritical or vice versa. It's in the blink of an eye in this case.

When touching the surface with the broom in the subcritical flow, why do the waves propagate so quickly upstream? It seems like they travel extremely fast, against the flow.

Upstream velocity of wave = wave velocity - fluid velocity
