The shrimp roll thing that you called is a steamed shrimp rice roll. You should try out the steamed rice roll with dried shrimp and green onion! And the soy sauce that they serve at dim sum is a sweet soy sauce that the restaurants makes from scratch. Balancing the sweetness from the saltiness of the soy sauce so that it can be more enjoyable with steamed dishes that tends to be bland buy yet not having it overly salty like how it would be if you'd just use regular soy sauce!

I wouldn't suggest ordering "siu long bao"/"Xiao long bao" (steamed soup dumplings) at a dim sum restaurant, as they are not known for that dish in particular. Dim sum is from the southern part of China whereas dishes like steamed soup dumplings or pan fried dumpling "wor tip" are from northern part China. So the best bet of where you would get quality items like those two would be Shanghai restaurants! Again Vancouver and Richmond B.C has amazing quality Asian food!!

I just went out for dim sum on Sunday. I too could eat it every day as there's so much variety. I tend to dowse mine in chilli oil. Har gaw and shu mai are amongst my favourites along with turnip cakes and chickens feet.

Bite a mini hole at the top of the soup dumpling suck some juice then eat it also u gotta add your own little mix of soy sauce and or chili oil onto each and everyoneeee

I definitely like my "ha gao" (steamed shrimp dumpling) skin to be stickier as well! It gives it a better texture! I personally enjoy dim sum very much, not cause I'm Chinese but because of the variation it has! Our family usually orders a lot of steamed dishes, fried dishes, rice/noodle dishes and chef's specials! My personal favourite is garlic black bean steamed chicken feet, which I know most people are afraid and or disgusted by it! But the flavours are amazing! I know that San Francisco has like the largest Chinatown in North America, and probably a high population of Chinese people. Though, if you ever have a chance to visit British Columbia, Canada. You should definitely come visit Vancouver and Richmond to try out a few superb Chinese restaurants with amazing dim sum and or just Chinese food in general!

im from Hong Kong. and for the shrimp roll that u put soy sauce on top, the skin is supposed to be slightly chewy, very smooth but not sticky and soft. the one u ate did not look that great to me. But the egg bun seems alright. in HK you can find runnier egg buns and we love that.

I think your "egg bun" is meant to be called an egg yolk custard bun! There are also another version just called custard bun which does not contain egg yolks in it!
